Chilli Cheese Garlic

This chilli-cheese garlic bread will elevate the vibes on the dinner table and spice up your night for sure.

Serves 4

Ingredients
1 large garlic bulb
1 tbsp olive oil
100g butter, softened
2 tbsp chopped parsley leaves
1 tbsp red chilli paste
1 large ciabatta loaf
100g grated mozzarella cheese

1. Heat the oven to 180C (200C non-fan).

2. Slice the top off the bulb of garlic, then drizzle it with the olive oil and season with a pinch each of salt and pepper. Wrap in kitchen foil and bake for 30 min until soft in the middle. Remove from the oven, but leave it on.

3. In a bowl, combine the butter with the parsley, red chilli paste and the roasted garlic cloves, squeezed from their skins. Mix with a fork until well combined. This is your garlic butter.

4. Slice the ciabatta in half lengthways and score each half in a grid pattern. Spread generously with the spicy garlic butter and top with the grated mozzarella. Bake for 15 min until crisp and bubbling.
