Frosted-Flake Chicken Waffles
Serves 2
Ingredients
300ml buttermilk
2 tbsp hot sauce
1 tsp garlic powder
A large pinch of salt
2 chicken breasts, each cut into 6 strips
300g frosted flakes
4 shop-bought Belgian waffles
To serve
Maple syrup
1. Combine the buttermilk, hot sauce, garlic powder and salt in a bowl.
2. Add the chicken to the seasoned buttermilk, ensuring the strips are well coated. Cover and allow to marinate in the refrigerator for 1 hour, or ideally overnight.
3. Heat the oven to 180C (200C non-fan).
4. Gather the frosted flakes inside a clean tea towel and use a rolling pin to gently bash to a fine crumb.
5. Coat the marinated chicken in the frosted-flake crumb and place on a wire rack set over an oven tray. Bake for 30 min, or until golden brown, flipping halfway through that time.
6. Heat the waffles according to the packet instructions.
7. Stack the chicken on the waffles and serve, drizzled generously with maple syrup.
